Cottage Pie with Cheesy Mash

Serves: 4

Time: 20 - 30 mins

Ingredients

  • 500g beef mince 

  • 1 onion finely diced 

  • 2 carrot fine chopped 

  • 1 clove garlic crushed 

  • 1 tsp mixed herb 

  • 300g mushrooms finely chopped 

  • 1 tin chopped tomatoes 

  • 350ml good quality beef gravy (I use M&S) 

    For the mash 

  • 1kg potatoes

  • 100g cheddar cheese 

  • Nob of butter 

  • Splash of milk 

Method

  1. Heat a frying pan until smoking hot, add the mince, season and cook until browned and caramelised - remove 

  2. Add the onion, carrot, garlic and herbs , reduce the heat. Season and cook for 5-6 mins until soft

  3. Add the mushrooms and cook for another 2-3 minutes then add the mince back to the pan

  4. Add the tomato’s and cook for 5 mins until most the of the moisture has evaporated and your left with a really thick mixture 

  5. Add the gravy and simmer gently for 20 minutes 

  6. Then transfer to an over proof dish. Allow to cook before topping with the mash

    For the mash 

  7. Dice the potatoes into 2cm chunks 

  8. Simmer for around minutes in salted water until tender and cooked 

  9. Drain and allow all of the stems to evaporated, season then add most of the cheese saving some to sprinkle over the top, a nob of butter and slash of milk. Mash until smooth

Preheat the oven to 180 degrees 

Spread the mash evenly over the mixture, fluff with a fork and then scatter over the remaining cheese 

Bake for 20-30 mins until golden
